Lemon and Rosemary Spatchcock Chicken

"This plump chicken is easy to carve. The meat is falling from the bone and clearly extremely juicy. The texture is fabulous and this chicken is juicy without being watery, a real joy to eat."

Remove from the fridge 1 hour before cooking. Preheat the oven to 200C (fan 180C). Roast for 1 hour until the juices run clear. Alternatively, cook on a barbecue for 30-40 minutes, turning regularly.
