Cut from the silverside of our Durslade Wagyu X beef, our Air Dried Beef is marinated in port, infused with juniper berries and bay, and hung for 12 weeks to allow the beef to cure.
Thinly sliced, just like Bresaola, it’s delicious served with a drizzle of olive oil and a squeeze of fresh lemon. It also works beautifully as part of an antipasto platter.

Our award-winning and 100% British beef and lamb are reared on our 1000 acre farm in Somerset, which backs directly onto the FARM SHOP Somerset, and other local, like-minded farms.
Our livestock is made up of Hereford, Aberdeen Angus and Wagyu cattle, and Mule and Exlana sheep.
