Our award-winning chicken cushion is made by boning out a whole chicken and wrapping it around out handmade Cumberland sausage meat.

Our chicken is free range and sourced from Creedy Carver where the birds roam freely in large grass areas.

"We loved the wafts from this very appealing cushion with golden skin and the pleasing pepper kick and sage from the stuffing, which contributed moistness to this moist chicken. The rosemary gave an overall finish. The skin was crispy and moreish and the flavours worked in harmony to create a spectacular piece."
Cooking tips
Brush the skin with olive oil, then roast in a preheated 200°C (fan 180°C) oven for 1 hour under foil. Finish uncovered for 30 -40 minutes until juices run clear. The internal temperature should be above 80. Rest for 15 minutes before slicing and serving.
Storage instructions
Keep refrigerated once delivered and consume by the use-by date. If frozen before expiry, our meats can be frozen and used within three months. Defrost fully before use. Do not re-freeze.
