Lamb Shank

From the lower leg of the animal, this cone-shaped cut is exceptional when cooked low and slow until the meat falls off the bone. Fat within the shank breaks down whilst it braises which releases a deep, rich flavour into the sauce. Allow one shank per person.
Keeping in line with our belief that we should eat only what is in season, the summer months see spring lamb giving way to slightly maturer hogget. Read more here.
Our hogget are grass-fed and reared on our Durslade Farm where they enjoy pastures of natural grasses, herbs and wild flowers.
