A boned and rolled Saddle of Lamb stuffed with our best-selling, harissa seasoned lamb merguez sausage meat. An alternative roasting joint to spice up your next Sunday roast.
The sausage meat not only packs a punch of flavour, it also keeps the lean lamb meat moist and succulent during cooking for a perfect result.
Our lamb is grass-fed and reared on our Durslade Farm where they enjoy pastures of natural grasses, herbs and wild flowers.

How it's made
First, the bones are removed from the loin and fillet of the lamb while keeping the meat intact, creating a saddle.
The merguez sausage mixture is then evenly spread along the centre of the meat, before the saddle is gently wrapped around the stuffing, ensuring a snug fit.
The outer fat is lightly scored to enhance flavour absorption and crisping during roasting.
Finally, the rolled saddle is secured with butcher’s twine to maintain its shape during cooking.
