Wagyu X Topside is a lean yet flavourful cut taken from the thigh of our Wagyu X cattle reared on our Somerset farm. Perfect for a Sunday roast, this cut is known for its deep, beefy flavour, with natural marbling of Wagyu X to enhance its tenderness.
Our Wagyu X cattle are grass-fed and reared on our Durslade Farm. For depth of flavour, our beef is dry-aged for a minimum of 28 days.

Cooking tips
Preheat the oven to 200°C (or 180°C fan). Season the beef with salt, pepper, and your favourite herbs or spices. Roast the beef, fat side up, for approximately 30 minutes per kg for medium-rare. Internal temperatures should be around 60°C. Leave to rest for 15-20 minutes before carving.
Storage instructions
Keep refrigerated once delivered and consume by the use-by date. If frozen before expiry, our meats can be frozen and used within three months. Defrost fully before use. Do not re-freeze.
