Recipe: Perfect Roast Potatoes
The perfect roast potatoes comes down to two things. First, choosing floury, not waxy, varieties of potatoes like King Edwards, Maris Piper or Desiree. Second, is the method of cooking them; to make perfect, fluffy roast potatoes you need to pre-boil them to the point they are nearly cooked and give them a good shake after draining so that the edges become rough.

Ingredients
- King Edwards, Maris Piper or Desiree potatoes
- Farm Shop Wagyu Dripping
Method

STEP 1
Pre-heat the oven to 200c/gas mark 6.

Peel the potatoes and chop into half or thirds depending on the size of the potato.

Add the potatoes to boiling water and par-boil them to the point where they are nearly cooked.

While the potatoes are boiling spread our Farm Shop Wagyu dripping onto a tray and put into the oven so that the tray and the dripping heats up.

Drain the potatoes, return them to the pan, put the lid on and give them a good shake so that the edges become rough.

Carefully remove the tray from the oven and toss the potatoes through the fat before returning to the oven. You can add fresh rosemary or thyme if wanted. Cook for about 50 - 60 minutes, until the potatoes are nice and crispy.
