Quality Ingredients

Found in 2012 by Mike Longman, who worked as a pastry chef and wanted chocolate made in Cornwall to meet his ethos of sourcing the best ingredients, locally when possible.

Bean to Bar

Beans arrive and are sourced and roasted. Following roasting, they are winnowed (removed from their shells to become nibs). The nibs are then stone-ground into fine granules to become a cocoa liquor, before sugar is added. The liquor is fed into the three-roll refiner, and then the chocolate is conched. Finally, it is poured out of the conche into large blocks to mature for 40 days.

Sustainability

Sustainability

Chocolarder is dedicated to zero-carbon alternatives wherever possible. They use plastic-free packaging for all their products and ensure their chocolates are free from palm oil and emulsifiers. They champion zero-carbon processes, slavery-free farming, and compostable or recyclable materials as well as using only the finest natural ingredients in the most eco-conscious way possible.

FARM SHOP x CHOCOLARDER

Working with Chocolarder, we have created chocolate bars, our Winter Truffles, and our new Honey Caramelised Butter Truffles. All of these are inspired by our farm, whether by using ingredients from our Walled Garden or honey from our hives, to create incredible-tasting chocolate with sustainability and quality produce at its heart.
