Recipe: Da Costa Meatballs
Next door to Farm Shop Somerset is Da Costa, an Italian restaurant with dishes rooted in tradition, care and imagination.
This recipe for family-friendly Italian Meatballs comes from the Da Costa children’s menu, but is loved by all. It’s a great dish to get the kids involved in making on a rainy weekend, or for a tasty weeknight meal, and it serves 8, so you can freeze any leftovers.
Ingredients
- 450g Beef Mince
- 450g Pork Mince
- 2 eggs
- 245g grated parmesan
- 6 cloves of garlic, crushed
- 400g bread crumbs
- 300g cold water
- Tomato Passata or other sauce, 2 jars
To serve
- Spaghetti, tagliatelle, sub rolls or crusty bread
- Basil
- Grated parmesan or other cheese
Method
-
Step 1
Combine the beef mince, pork mince, eggs, grated parmesan, crushed garlic and breadcrumbs in a big mixing bowl, slowly adding the cold water until it's moist. Get the kids to use their hands, but warning: it can get messy!
-
Step 2
Roll the meat mixture into small balls, about the size of a tablespoon. Place on a tray in the fridge to chill, so they hold their shape when cooking.
-
Step 3
After about 30 minutes, take the meatballs out of the fridge, and heat oil in a large pan over a medium heat. Sear the meatballs, then add enough tomato sauce to cover them. Simmer until the meatballs are cooked through.
-
Step 4
While the sauce simmers, cook your preferred pasta, prep the sub rolls, or warm some crusty bread for dipping.
-
Step 5
Serve the meatballs, with your pasta, sub rolls or bread. Grate parmesan on top and garnish with basil.
