
Recipe: Spaghetti with wild garlic sausages
Enjoy a taste of the season with this delicious pasta dish made with our Wild Garlic Sausages. Created in our butchery counter by our expert team these sausages are made with succulent local pork. For an extra wild garlic kick, use our Wild Garlic Salt instead of plain salt.
Ingredients
- 8 Wild Garlic Sausages
- 200g spaghetti
- 1 red onion, finely diced
- 1 small handful wild garlic, roughly chopped
- 2 tbps tomato paste
- 2 tins chopped tomatoes
- White Lake English Pecorino
- Olive oil
- Salt and black pepper
Method

STEP 1
Heat a large heavy based frying pan on the stove with a splash of olive oil and a good sprinkle of salt and pepper. Fry the sausages until they have got colour and then continue to cook for 5 minutes. Remove the sausages onto a plate and set to one side.

Add the onion and wild garlic to the same pan and cook until soft. Then add the tomato paste and tins of tomatoes and stir in well. Add another decent splash of olive oil and then cook slowly, reducing the sauce by half and stirring frequently, which will take approx 20 mins.

Add the sausages back to the pan, turn the heat down to lightly simmer and stir occasionally.

In a separate pan, add the spaghetti to salted boiling water and cook until al dente.

Drain the spaghetti, stir into the pasta and serve with finely grated English pecorino.
