What is Kombucha?

Kombucha, a low-sugar probiotic soft drink, originated in China around 220 BC, known as the ‘Elixir of Life’ for its believed healing properties. It spread to Europe via trade routes and gained popularity in the 1960s when compared to yogurt for its health benefits. With growing probiotic awareness, its popularity has surged.

The We Are Kombucha story

The We Are Kombucha story

We Are Kombucha is run by Liam and Ed, two best friends with a passion for the craft brewing culture. They tried many Kombuchas over the years and wanted to stay true to the original brewing process, so decided to create their own.

They create sustainable and environmentally friendly products, using 100% aluminium cans and 100% organic sugar and green tea when creating the kombucha.

The Process

The Process

Organic tea is steeped with hot water and sugar, creating a sweet green tea. This tea is then cooled, and a ‘starter liquid’—a previous batch of kombucha that has been left to ferment longer—is added. The SCOBY (Symbiotic Culture of Bacteria and Yeast) is left to ferment for a number of weeks, during which the bacteria feed on the sugar, transforming the liquid and creating the delicious kombucha taste. Finally, the liquid is processed so that it is clear and sparkling.

Since Farm Shop started working with We Are Kombucha, we have created four unique flavours – the perfect grown-up, lightly sparkling soft drink. From Blackberry and Honey, made with honey from the hives on our estate, to the light Elderflower and Green Tea, there’s a flavour to suit every taste.
