The addition of dandelion petals, foraged on our Somerset estate, gives a subtly sweet yet earthy taste to the zestiness of the orange. To forage is to search and collect food from nature, typically through wild landscapes – and that’s exactly what our in-house forager, Kenny, does. Using the farm and seasonality as his inspiration, he collects grains, berries, fruits and vegetables to create a unique range of sustainable and low-impact pickles, preserves and sauces that vary depending on what he finds.
