A forgotten sauce, Pontack Sauce is made using foraged elderberries and cooked with vinegar, shallots, ginger and spices to give it acidity, a slight fruity-ness and warmth from the spices. Fantastic with game and offal like liver and kidney, but equally why not add a dash to gravies and meat sauces for extra pep.
