Our version of a much-loved ferment, our sauerkraut is a good portion of finely chopped and fermented cabbage and leeks. The addition of bay leaves and juniper berries add a slightly bitter yet fresh twist to the typically tangy German condiment. It makes a delicious addition to a leafy salad, serve atop hot dogs or alongside rich, crispy pork.
