Taken from the lower chest of the animal Brisket Flat is slightly leaner part of the brisket but still packed with flavour. This cut needs to be cooked low and slow or smoked in order to become soft and tender.
Our Wagyu X cattle are grass-fed and reared on our Bruton farm. For depth of flavour, our beef is dry-aged for a minimum of 28 days.
